Capsicums are stuffed with variety of stuffing but this one here we are using mashed potatoes and peas. You can make it more colorful and appealing by using different types like a combination of orange, green and red.
6-7 small sized green peppers
4 potatoes bolied n mashed
3 tbsp cooking oil
3/4 tsp cumin seeds
3 cloves garlic, finely chopped
1 large onion finely chopped
1 green chilli finely chopped
2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala
1/2 tsp raw mango powder(you can find this in Indian store with the name amchoor)
Salt to taste
- Thoroughly was the capsicum. Slice off thinly from the tops of the green capsicum and scoop out the core to make them hollow. Similarly slice off thinly from the bottom so that the capsicums stand steady when placed on a baking tray
- Mash the boiled potatoes and rest of the spices in them.Heat oil in a pan and add onion. Cook till translucent and add ginger and green chillies. Mix in potato mixture and continue to cook for two minute
- Preheat oven to 200.
- Stuff this mixture into capsicum
- Bake it for 10 minutes until tender
You can sprinkle little bit of cheese and cashews over capsicum before baking if you want to make it more flavorful.
Stuffed Peppers, there are a lot of ways to make these stuffed chillies, you may either fill them with potatoes(as i did), or barley, gramflour or mixed vegetables,or any non veg stuffing, anything as par your taste.
