Vegetable Grilled Sandwich – easy and quick breakfast

During Morning, no one has time to cook and everybody wants quick and easy bite. Cereals are sometime too boring so this will be a quick and easy breakfast.Veggie Sandwich is very easy to make and a delicious for veggie lovers.

8-10 slices of whole wheat bread
3/4 cup shredded cabbage
3/4 cup finely chopped capsicum
3/4 cup grated carrots
3/4 cup grated low fat paneer (cottage cheese)
2 tbsp chopped coriander (dhania)
1 green chilli, chopped
2 tbsp mozzarella cheese
salt to taste
4 tsp low fat butter for cooking

Mix all the ingredients together. Divide the stuffing into 4-5 equal portions.
Place one portion of the stuffing on one slice of bread. Put one cheese single slice on top. Top with another slice of bread.Repeat with the remaining ingredients to make more sandwiches.
Pre-heat the griller and grill the sandwiches, using a little low fat butter to cook.
Serve hot.
